To ensure juicy and deliciously grilled pork ribs, Molly Yeh suggests first baking them in foil in the oven, then cutting them, brushing them with barbecue sauce, and grilling them until grill marks appear on each rib. The ribs' delicious stickiness comes not only from the sauce but also from the brown sugar added to the dry marinade.
The recipes use measuring containers with the following volumes:

- 1/4 cup light brown sugar
- 2 tbsp. granulated sugar
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- 1 tsp onion powder
- 1 teaspoon paprika
- 1 rack of pork spare ribs, removed from the loin (1.3 kg)
- 2 cups Uncle Ben's Texas BBQ Sauce

Cooking the dish according to the recipe:
- Preheat oven to 150°C.
- Meanwhile, in a small bowl, combine brown sugar, granulated sugar, chili powder, garlic powder, onion powder, paprika, 2 teaspoons salt, and about 30 turns of black pepper.
- Place the ribs on a piece of foil large enough to fold over and seal, then place on a baking sheet. Sprinkle the spice mixture over the entire meaty surface of the ribs. Wrap tightly in foil to prevent juices from escaping during roasting. Roast until the meat is tender and can be easily pulled from the bone with a fork, about 2 hours.
- In a small saucepan, heat the barbecue sauce over medium heat. Remove the ribs from the oven and unwrap the foil. Transfer the ribs to a plate, pour any accumulated juices into the barbecue sauce, and toss to combine. Continue to simmer the sauce until it thickens, about 7 minutes.
- Preheat a grill or grill pan over medium heat.
- Cut the ribs into individual bones. Brush with barbecue sauce. Place the ribs on the grill and cook until grill marks appear, a few minutes per side. Brush with barbecue sauce and remove from heat. Serve with the remaining barbecue sauce.
