"With this recipe, you practically don't have to do anything: your slow cooker will do the work all day. At the very end, all you have to do is grill the ribs, which only takes a couple of minutes. The smoked paprika in the spice mixture and the low heat of the slow cooker are the key to tender, juicy, smoky ribs that are much more delicious than they seem. If you're in a hurry, you can cook them on high for 4-5 hours. And if you don't have a grill, you can broil the ribs in the oven until they're beautifully browned," says Melissa De Arabian.

Cooking the dish according to the recipe:
- Spice mix:
Place salt, smoked and sweet paprika, onion powder, garlic powder, cumin, black pepper, and cayenne pepper (if using) in a small bowl and stir with a fork. - Spray the ribs with vinegar and rub it into the flesh. Rub the ribs with the spice mixture. At this point, you can refrigerate the ribs overnight.
- Spray the inside of a large (at least 6 quart) slow cooker with cooking spray. Place the ribs in the slow cooker, cutting them in half if necessary to fit them. Pour beer into the bottom of the pot. Cover and cook on low until the meat is tender, about 9 hours.
- When the ribs are almost done, preheat the grill to high heat.
- Remove the ribs from the slow cooker, blot off any excess liquid, and place them on a hot grill. Grill until crispy, 10–15 minutes, brushing with barbecue sauce (if using).
