Cook barbecue pork ribs at home, just as delicious as restaurant-style. Make a homemade barbecue sauce just for them, then brush them with it while roasting and serve as a dipping sauce. The secret ingredient in this sauce is smoked bacon. When grilled, its delicious fat will render, infusing the sauce, and ultimately the ribs, with a wonderful smoky flavor. Bake the ribs at a low temperature, making them tender and juicy. When they're almost done, begin brushing them with the sauce. Grill them until golden brown and serve immediately.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 racks pork spare ribs (about 1.3 kg)
  • Olive oil
  • 2 slices of bacon
  • 4 sprigs of fresh thyme
  • Half an onion
  • 3 crushed garlic cloves
  • 2 tbsp. ketchup
  • 1 cup peach jam
  • 2 tablespoons Dijon mustard or 1 tablespoon dry mustard
  • 2 tbsp. l. brown sugar
  • 1/4 cup molasses
  • 2 tablespoons red or white wine vinegar
  • 1 tsp ground cumin
  • 1 teaspoon ground paprika

  1. Preheat oven to 120°C, place ribs on a baking sheet, season with salt, pepper and drizzle with olive oil.

    Wrap the bacon around the center of the thyme sprigs and tie with kitchen twine to form a bundle. Heat 2 tablespoons of olive oil in a large saucepan over medium heat. Add the thyme bunch and cook for 3-4 minutes, until the bacon fat renders, imparting a pleasant smoky flavor to the sauce.

  6. Add the onion and garlic and sauté for 5 minutes, preventing them from browning. Add the remaining sauce ingredients, stir, and reduce the heat to low. Cook at a low simmer for 20 minutes to allow the flavors to meld.
