This recipe will give you perfectly succulent pork ribs, even if you're making them for the first time. Meaty pork ribs are marinated in a dry mixture of brown sugar and spices, then braised in a small amount of broth until the meat is tender and exposed. This cooking method ensures the ribs won't burn or dry out on the grill, and to give them a natural barbecue flavor, grill the finished ribs on an outdoor grill. They'll develop a delicious crust, and your guests won't even know they were cooked in the oven. And as an added bonus, the braising liquid turns into a delicious barbecue sauce.

Ingredients:

  • 2 slices of pork ribs, removed from the loin
  • 1/4 cup brown sugar
  • 2 tbsp. ground chili mixture
  • 1 teaspoon dried oregano
  • 0.5 tsp cayenne pepper
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 1 cup lightly salted chicken broth
  • 2 tablespoons apple cider vinegar
  • 1 tbsp. Texas barbecue sauce
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a small bowl, combine brown sugar, ground chili mixture, 1 tablespoon salt, 1 teaspoon black pepper, oregano, cayenne pepper, garlic powder, and onion powder and rub the mixture over both sides of the ribs. Cover and refrigerate for 1 hour or overnight.
  • Step 2
  • Preheat oven to 120°C (250°F). Combine broth and vinegar in a roasting pan. Add the ribs. Cover tightly with foil. Roast for 2 hours. Remove the ribs from the roasting pan and transfer them to a platter. Pour the liquid from the roasting pan into a saucepan and bring to a simmer. Reduce heat and simmer until the liquid has reduced by half. Add the barbecue sauce.
  • Step 3
  • Preheat an outdoor grill to medium-high heat. Place the ribs on the grill and cook for about 5 minutes per side, until browned and lightly charred. Cut the ribs between the bones and toss them in a large bowl with the sauce. Serve hot.
