Miso-glazed cod - a detailed recipe.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 6 black cod or cod fillets (170 g)
  • 1/3 cup low-salt white miso paste
  • 1/4 cup dark brown sugar
  • 1 teaspoon toasted sesame oil
  • 2 tablespoons mirin (Japanese table wine)
  • Toasted sesame seeds and green onions for garnish (optional)

Cooking the dish according to the recipe:


  1. Preheat the oven grill.

    Rinse the fish and pat dry with paper towels. Combine miso, brown sugar, sesame oil, and mirin, stirring well until the sugar is completely dissolved.
  2. Brush each fish fillet with 2 tablespoons of miso glaze. Marinate for at least 30 minutes or up to 1 hour. Grill the fish for 3-4 minutes, until the surface is lightly browned and the glaze is caramelized.

    Remove the fish from the oven and brush with the remaining glaze. Reduce the oven temperature to 190°C (375°F). Bake for another 5-6 minutes, until the fish begins to fall apart, but be careful not to overcook it.

    Serve with toasted sesame seeds and green onions, if desired.
