The amazing flavor of this fried chicken comes from a glaze, which doubles as a marinade, made with honey, miso paste, and orange juice. Marinate the chicken in this mixture for several hours, then grill or pan-fry, brushing it with the glaze. The chicken turns out deliciously sticky, shiny, and juicy on the inside.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Cooking the dish according to the recipe:
- Marinade/glaze:
In a small saucepan, combine honey, miso, orange juice, a few chili flakes and plenty of coarsely ground black pepper. - Heat over medium heat, stirring, until the liquid thickens slightly to the consistency of a glaze, 6-8 minutes. Let cool to room temperature.
- Chicken:
Pour half the marinade into a zip-lock plastic bag, reserving the other half for the glaze. Place the chicken pieces in the bag with the marinade and seal. Let the chicken sit at room temperature for 1-2 hours. - Heat a frying pan or half a grill.
- Remove the chicken from the bag and pat dry with paper towels. Place skin-side down over indirect heat and grill, covered, until the chicken pulls easily from the grill, about 15 minutes.
- Then flip and grill the other side until cooked through, another 15-20 minutes. Brush each chicken piece with a little of the remaining glaze one minute before it's done.
