The amazing flavor of this fried chicken comes from a glaze, which doubles as a marinade, made with honey, miso paste, and orange juice. Marinate the chicken in this mixture for several hours, then grill or pan-fry, brushing it with the glaze. The chicken turns out deliciously sticky, shiny, and juicy on the inside.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Marinade/glaze

  • 1/3 cup creamed honey
  • 1/4 cup red miso paste
  • 1/4 cup orange juice
  • Red pepper flakes

Chicken

  • 1 whole chicken, cut up

Cooking the dish according to the recipe:


  1. Marinade/glaze:

    In a small saucepan, combine honey, miso, orange juice, a few chili flakes and plenty of coarsely ground black pepper.
  2. Heat over medium heat, stirring, until the liquid thickens slightly to the consistency of a glaze, 6-8 minutes. Let cool to room temperature.

  3. Chicken:

    Pour half the marinade into a zip-lock plastic bag, reserving the other half for the glaze. Place the chicken pieces in the bag with the marinade and seal. Let the chicken sit at room temperature for 1-2 hours.
  4. Heat a frying pan or half a grill.
  5. Remove the chicken from the bag and pat dry with paper towels. Place skin-side down over indirect heat and grill, covered, until the chicken pulls easily from the grill, about 15 minutes.
  6. Then flip and grill the other side until cooked through, another 15-20 minutes. Brush each chicken piece with a little of the remaining glaze one minute before it's done.
