If you're cooking beer can chicken on a charcoal grill, the only spices you'll need are salt and pepper: the smoke and beer flavors themselves act as seasoning. Be sure to place a drip pan under the chicken to prevent drippings from igniting.

Cooking the dish according to the recipe:


  1. Light a charcoal grill. Let the coals burn down for 25–30 minutes. Carefully move the coals toward the sides of the grill to form a "ring." Place a drip pan in the center of the ring. Cover with a grate.
  2. Season the chicken with salt and pepper. Thread it onto a beer can. Place the chicken upright in the center of the grill over a drip tray. Cover and cook until the chicken is cooked through and the juices run clear when pierced, 45 minutes to 1 hour.
