Slice them thinly on the diagonal and sauté them in butter, pumpkin pie spice, apple cider vinegar, and brown sugar until all the slices are coated with a glossy, spicy glaze with hints of caramel. In a large skillet over medium-high heat, sauté 1 pound thinly sliced carrots in butter with 3/4 teaspoon each pumpkin pie spice, salt, and black pepper for 3 minutes. Stir in 1 cup water and 1 tablespoon each apple cider vinegar and dark brown sugar. Cover and simmer until tender, 12 to 14 minutes, stirring once. Add 1 tablespoon butter and simmer, uncovered, until the carrots are glazed, another 3 to 5 minutes. Season with salt and pepper to taste and sprinkle with shelled pumpkin seeds.
