Before roasting, turkey legs are soaked for 24 hours in a brine made from equal parts salt, maple syrup, and bourbon, along with grainy mustard, black and red pepper, cloves, garlic, bay leaf, and dried thyme. This combination imbues the meat with a rich bouquet of flavors, harmoniously blending salty, spicy, sweet, and savory notes, leaving the legs juicy and aromatic. To ensure even cooking and browning, roast them on a rack in a roasting pan, spacing them out so the heat circulates freely around the meat.

The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.

1/3 cup (st.) - 80 ml.

1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Cooking the dish according to the recipe:

  1. In a medium saucepan, heat all ingredients except the turkey over low heat. Cook, stirring occasionally to dissolve the salt. Once the salt has dissolved, remove the brine from the heat and let it cool. Place the turkey legs in a large zip-lock plastic bag and pour the brine over them. Seal the bag tightly and place it in a bowl (to prevent leaks). Refrigerate for 24 hours.
  2. After 24 hours, remove the turkey, pour out the brine and preheat the oven to 175°C.

  3. Place the turkey legs in a roasting pan with a rack fitted, leaving space between them for even roasting. Roast for 90 minutes. Remove the legs from the oven, transfer to a serving platter, and serve hot or cooled.
