Oven-baked turkey brined in lemon brine - a detailed recipe.


Ingredients:

  • 1 (5.5-6.5 kg) defrosted and gutted turkey

For the lemon brine:
  • 7.5 liters of water
  • 1 cup of sugar
  • 1 cup coarse salt
  • 2 lemons, cut into wedges
  • 4 bay leaves
  • 3 tubes cinnamon
  • A small handful of cloves
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place all brine ingredients in a large container and mix thoroughly. Place the turkey in the brine and refrigerate for 6-10 hours.
  • Step 2
  • Preheat oven to 180°C. Remove the turkey from the brine and place it in a baking dish. Stuff the turkey with the lemon wedges, bay leaves, and cinnamon sticks removed from the brine.
  • Step 3
  • Put turkey Place the turkey in the bottom of the oven and roast for 3.5 hours, basting with the turkey juices every 40 minutes. If the turkey is burning, cover with foil. Check for doneness by piercing the thigh with a knife; the juices should run clear. Remove the turkey from the oven and place it on a cutting board for 20 minutes.
