Roast a flavorful whole turkey in the oven, South American style, with thyme, paprika, and cayenne pepper.

Ingredients:

  • 1 (6 kg) defrosted and gutted turkey, rinsed and dried
  • 1 tbsp smoked paprika
  • 1.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 1 tsp cayenne pepper
  • 1 teaspoon dried thyme
  • Coarse salt and freshly ground black pepper
  • Fresh thyme, for garnish

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

  • In a bowl, combine smoked paprika, garlic powder, onion powder, cayenne pepper, dried thyme, 1 tablespoon salt, and 1.5 teaspoons freshly ground pepper. Rub the turkey with the spices inside, out, and under the skin. Place on a baking sheet, cover with plastic wrap, and refrigerate for 24 hours to allow the spices to infuse.
