Roasted Turkey with Rosemary

Turkey recipe, marinated with ginger in a liquid brine and oven-baked with rosemary. The bird is stuffed with red apple, combined with aromatic cinnamon, and sage, a spice that tenderizes the meat.
Ingredients:
For the turkey:
- 1 frozen turkey (6-7 kg)
For the brine:
- 1.5 tsp allspice
- 1.5 tsp chopped candied ginger
- 1 tbsp. black peppercorns
- 4 liters of vegetable broth
- 1/2 cup brown sugar
- 1 cup coarse salt
- 4 liters of ice water
For the filling:
- 1 red apple, cut into wedges
- 1 medium onion, cut into wedges
- 1 cinnamon stick
- 1 cup of water
- 4 sprigs of rosemary
- 6 sage leaves
- Canola oil
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.

Preparation:

- 2-3 days before roasting, begin defrosting the turkey in the refrigerator. Step 2
- In a large saucepan, combine vegetable broth, salt, brown sugar, peppercorns, allspiceBring the brine and ginger to a boil. Then remove the brine from the heat and let it cool to room temperature. Step 3
- Mix the brine and ice water in a 20-liter bucket. Place the gutted, thawed turkey breast-side down in the bucket (the turkey should be completely submerged in the brine), cover, and refrigerate for approximately 8 to 16 hours, turning the turkey once during brining. Step 4
- Preheat oven to 250°C. Remove the turkey from the brine, rinse inside and out with cold water, and discard the brine. Place the turkey in a baking dish and pat dry with paper towels. Step 5
- Combine apples, onion, and straw in a microwave-safe bowl. cinnamon, and 1 cup of water, microwave on high for 5 minutes. Stuff the turkey with the prepared vegetables and fruit, add the sprigs. rosemary and sage. Generously brush the turkey with canola oil and place it on its back, tucking the wings under the turkey. Step 6
- Place the turkey on the bottom of the oven and roast until golden brown. After 30 minutes, measure the thickest part of the breast with a thermometer (it should read 160°F), then reduce the oven temperature to 350°F (180°C) and roast for 2 to 2.5 hours. Remove from the oven, cover with foil, and let rest for 15 minutes. Transfer the turkey to a serving platter and top with vegetables and fruit, garnishing with rosemary sprigs.
