Traditional Christmas turkey baked in the oven

A step-by-step recipe for making a traditional oven-baked Christmas turkey.
Ingredients:
- One (6-7 kg) frozen young turkey
- 4 liters of vegetable broth
- 1 cup coarse salt
- 1/2 cup brown sugar
- 1 tbsp. black peppercorns
- 1.5 tsp whole allspice
- 1.5 tbsp. candied ginger, chopped
- 4 liters of water, ice cold
- Ice
- Vegetable oil, for frying
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:
- Step 1
- Two to three days before baking: Start defrosting the turkey in the refrigerator. Step 2
- In a large saucepan, combine the broth, salt, sugar, black pepper, allspice, and ginger and bring to a boil. Stir. Remove from heat. Cool the marinade to room temperature and refrigerate. Step 3
- The night before baking: If desired, tie the turkey legs with kitchen twine. Combine the marinade, water, and ice in a 5-gallon bucket. Place the thawed turkey breast-side down in the marinade. If necessary, apply weight to ensure the bird is completely submerged. Cover and refrigerate. Turn the bird over once halfway through the marinating process. Step 4
- Baking day: Preheat oven to 260°C. Remove the turkey from the brine and rinse it inside and out with cold water. Discard the brine. Step 5
- Place the bird on a rack set in a baking sheet and pat dry with paper towels. Brush the turkey with vegetable oil. Roast the bird on the lowest rack of the oven for 30 minutes. Step 6
- While the bird is roasting, fold the foil into two layers and cover the turkey breast tightly. Step 7
- After 30 minutes, reduce the oven temperature to 180°C (350°F), insert a candy thermometer into the thickest part of the breast, and roast until the temperature reaches 160°F (70°C). Use foil during cooking if the bird begins to burn. Cooking time for a turkey is 17 minutes per 1 pound (450g) of bird weight. Step 8
- Remove the turkey from the oven, cover loosely with foil, and let rest for 15-30 minutes. Carve the bird and serve.
This dish pairs well with a red Merlot wine.
