Grilled Chicken Curry

BBQ chicken marinated overnight with curry powder and lime juice.

Whole chicken is great for grilling, and rubbing it with spices flavored with curry powder gives it a national flavor.


Ingredients:

  • 1 whole broiler chicken without spine, weighing 1.5 kg.
  • Zest of one lime
  • 1/4 - 1/2 cup (30-50 g) curry spices
  • 1/4 cup chopped parsley
  • 2 tbsp. salt
  • 1 tbsp. crushed black pepper
  • Vegetable oil for frying
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Pull back the skin on the breast and legs. Rub the chicken under the skin with lime zest. Mix curry powder, parsley, salt, and pepper and rub the chicken all over. Place in a resealable plastic bag. Marinate the chicken overnight in the refrigerator.
  • Step 2
  • Preheat the grill to medium heat. Grease the grill with vegetable oil.

    Place the chicken skin-side down on the grill and cook until the skin is golden brown, about 15 minutes. Turn the chicken over, cover with a lid, and continue cooking for about 25 minutes, until cooked through. Remove from the grill, cover with foil, and let rest before serving.
