To make chicken adobo, a traditional dish of exotic Filipino cuisine, you don't need to look for any special ingredients. All you need is chicken, soy sauce, and white vinegar in equal parts, along with common kitchen staples like garlic, black peppercorns, and bay leaves. Choose chicken thighs: they're juicier and tastier. First, marinate the chicken in the sauce for several hours, then simmer it in the sauce until tender and the sauce thickens. Serve the chicken adobo with the sauce.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1.8 - 2.2 kg chicken thighs
  • 0.5 cup white vinegar
  • 0.5 cup soy sauce
  • 4 cloves garlic, crushed
  • 1 teaspoon black peppercorns
  • 3 bay leaves
  • Steamed rice, for serving

Cooking the dish according to the recipe:


  1. Combine the chicken thighs, vinegar, soy sauce, garlic, peppercorns, and bay leaf in a large saucepan. Cover and refrigerate the chicken to marinate for 1-3 hours.
  2. Bring the chicken to a boil over high heat. Reduce the heat, cover, and simmer for 30 minutes, stirring occasionally. Remove the lid and simmer until the sauce has reduced and thickened and the chicken is tender, about 20 minutes more. Serve with rice.
