This simple salad from Food Network Kitchen, ready in just 25 minutes, boasts a rich Mediterranean flavor profile: the cool freshness of cucumber, slightly salty Kalamata olives, and chunks of feta cheese, all topped with shrimp cooked with minimal spices. Just the thing for a complete meal!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 450 g large peeled shrimp
  • 1/3 cup extra-virgin olive oil, plus more for the shrimp
  • Coarse salt and freshly ground pepper
  • 8 cups (about 225 g) young arugula shoots
  • 1 cup sliced ​​cucumber
  • 1/2 cup pitted Kalamata olives
  • 1/4 cup thinly sliced ​​red onion
  • 2 tablespoons fresh lemon juice
  • 230g feta cheese (crumbly), for serving

Cooking the dish according to the recipe:
