If you've never tried watermelon in a savory salad, this recipe is a great place to start filling that gap in your culinary repertoire. It's impossible not to fall in love with this explosion of flavors! All the ingredients come together harmoniously: sweet watermelon, slightly bitter arugula, salty feta, and a fragrant, tart dressing. Fresh mint completes this delicious fusion. This superb summer salad makes a wonderful light side dish for meat or fish dishes.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 1/8 of a watermelon without seeds, cut off the rind, cut the pulp into 2.5 cm cubes.
  • 1/4 cup freshly squeezed orange juice
  • 1/4 cup freshly squeezed lemon juice (2 lemons)
  • 1/4 cup chopped shallots (1 large onion)
  • 1 tbsp. honey
  • 0.5 cups of good olive oil
  • 1 teaspoon coarse salt
  • 0.5 tsp ground black pepper
  • 6 cups arugula, washed and dried
  • 350 g feta cheese, cut into 1.5 cm cubes.
  • 1 cup (120 g) mint leaves, cut into strips

Cooking the dish according to the recipe:


  1. Whisk together the orange juice, lemon juice, shallot, honey, salt, and pepper. Slowly whisk in the olive oil, whisking constantly until the dressing emulsifies. If not using within an hour, cover and refrigerate.
  2. Place the arugula, watermelon, feta, and mint in a large bowl. Drizzle with a little vinaigrette. Toss, taste for salt, and serve immediately.
