Gazpacho is a famous Spanish summer soup. Originally considered a poor man's dish, peasants prepared it with vinegar, water, bread, olive oil, and garlic. Later, tomatoes and other vegetables were added to the soup, and from being a poor man's soup, it became a traditional Spanish dish, even served at royal receptions. The main advantage of gazpacho is that it doesn't require cooking, thus preserving all its beneficial properties. It's ready in just a few minutes, simply by blending all the ingredients. This Spanish soup is served chilled, making it a perfect choice for those hot summer days.

Make a unique version of gazpacho by replacing some of the tomatoes with watermelon pulp.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 cups watermelon, diced
  • 1 large tomato, pureed
  • Half a serrano pepper
  • 1 teaspoon red wine vinegar
  • 1/4 cup olive oil
  • 2 tablespoons chopped red onion
  • Half a cucumber, seeded and finely chopped
  • 2 tbsp chopped dill, plus extra for serving
  • 1/4 cup crumbled feta cheese

Cooking the dish according to the recipe:


  1. In a blender, combine the tomatoes, pepper, and 1 cup of watermelon. Pour in the red wine vinegar and olive oil. Puree everything, then add the onion, cucumber, and dill. Season with salt and pepper to taste. Blend until smooth.
  2. Pour the gazpacho into chilled bowls, sprinkle with dill, cheese, and the remaining watermelon cubes. Serve.
