Sweet watermelon, refreshing mint, and spicy jalapeño—these seemingly incompatible ingredients combine to create a luscious summer salsa that can be served as an appetizer with tortilla chips. For this recipe, choose seedless watermelon.

Ingredients:

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons freshly squeezed lime juice
  • 4 cups finely chopped seedless watermelon

  • 2 jalapeños, stemmed, seeded and finely chopped
