Made with canned roasted bell peppers, jalapeños, and fresh cilantro, this salsa comes together in minutes in the blender and is sweet and spicy, with a hint of heat and smoke, perfect as a dip with chips or as a side for eggs or potatoes.

Ingredients:

  • 1/2 cup tightly packed fresh cilantro (leaves and thin stems only)
  • 1 can (350g) canned roasted sweet peppers, drained
  • 1 clove of garlic
  • 1 jalapeño pepper, seeded and chopped
  • Half a small red onion, chopped
  • Juice of 1 lime (about 2 tbsp)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • Place the cilantro, roasted bell pepper, garlic, jalapeño, onion, lime juice, and 1/2 teaspoon salt (in that order) in a blender. Pulse until the mixture forms a sauce with small chunks, scraping down the sides of the bowl as needed.
