Ingredients:

  • 1/2 cup lightly toasted almonds
  • 2 tablespoons toasted pine nuts
  • 2 crushed cloves of garlic
  • 2.5 cups of white grapes and 1 cup of white grape juice
  • 1/2 cup boiled water
  • 2 slices cubed country white bread (crusts removed)
  • 1 cup heavy cream, whipped to soft peaks
  • 2-3 tablespoons verjuice (juice from unripe grapes)
  • 2 - 3 tablespoons walnut oil
  • Chopped chives for garnish
  • Toasted almonds slivered for garnish (optional)
  • Corinth grapes (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Place the almonds, pine nuts, garlic, grapes, grape juice, water, and bread in a blender and blend until smooth. Strain the mixture into a bowl. Refrigerate the soup for at least 30 minutes.
  • Step 2
  • Remove the soup from the refrigerator and stir in heavy whipping cream. Add a few tablespoons of verjuice or walnut oil. Ladle the soup into serving bowls and garnish with chives, almonds, or grapes, if desired.
