Cooking the dish according to the recipe:
- Place the grilled onion, oil, lemon juice, and zest in a food processor and process until smooth. Add the feta cheese and garlic and process again until smooth. Transfer the mixture to a bowl and garnish with chopped green onions.
- Preheat the grill to high. Brush the pitas with the remaining oil and season with salt and pepper to taste. Grill for about a minute on each side, until lightly golden brown. Remove from the grill and cut each pita into 8 wedges. Serve with cheese dipping sauce.
