Ingredients:

  • 6 cups mixed salad greens (soak in salted water to remove dirt, spin dry, and tear into small pieces)
  • 1 cup pitted olives
  • 2 cucumbers, peeled and cut into 0.5 cm circles
  • 1 cup diced feta cheese

Refueling:
  • 2 tablespoons balsamic vinegar
  • 1 clove of garlic, cut into 4 pieces
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tsp salt
  • 1/8 tsp black pepper
  • 3/4 cup olive oil
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Pour vinegar into a blender, cover with a lid, turn on the blender, and through the hole in the lid, add garlic, crushed red pepper, salt, and black pepper one by one. With the blender running, slowly pour in the olive oil. Set aside until ready to use.
  • Step 2
  • Toss the greens, olives, and cucumbers with a generous amount of dressing. Add the feta cheese. Serve with a little more dressing on the side.
