Ingredients:

  • 1 cup pitted olives, halved
  • 5 Persian cucumbers
  • 1 piece (110 g) feta cheese in brine
  • 1 small red onion, halved and thinly sliced ​​into half rings
  • Salt and ground black pepper
  • 1/4 cup red wine vinegar
  • Grated zest and juice of 1 lemon
  • 1 teaspoon of honey
  • 1 teaspoon dried oregano
  • 1/4 cup olive oil, plus more
  • Fresh oregano leaves for sprinkling (optional)

Preparation:

    Step 1
  • Soak red onion in a bowl of heavily salted ice water for 15 minutes.

    Meanwhile, in a large bowl, whisk together the vinegar, lemon zest and juice, honey, dried oregano, 1/2 teaspoon salt, and 1/4 teaspoon pepper. Whisk in the olive oil in a thin stream until emulsified. Add the tomatoes and olives and toss to combine.

  • Peel the cucumbers, leaving strips of green skin. Trim the ends, halve lengthwise, and slice crosswise into slices about 1 cm thick. Place in a bowl with the tomatoes. Strain the red onion, add it to the bowl, and toss.

    Drain the brine from the cheese and cut it horizontally into 4 equal rectangles. Divide the salad among plates. Top with feta cheese and oregano, drizzle with olive oil, and season with pepper.
