In Greece, this luscious Greek salad is simply called "village salad." It's delightfully easy to prepare and always lifts the spirits with its vibrant summer colors and flavors typical of Mediterranean cuisine. It's a sure-fire appetizer for any occasion. The salad includes red and yellow bell peppers, cucumbers, sweet cherry tomatoes, thinly sliced ​​red onions, black olives, and the crown jewel of the Greek salad—cubes of feta cheese. All the vegetables are tossed in a tart vinaigrette with garlic and oregano, and the salad is left to simmer for a few minutes to infuse the flavors.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Salad

  • 1 hothouse cucumber with skin, seeded and cut into 0.5 cm thick slices.
  • 1 red bell pepper, diced into large cubes
  • 1 yellow bell pepper, diced into large cubes
  • 2 cups cherry or grape tomatoes, halved
  • Half a red onion, cut into half rings
  • 220 g feta, cut into 1 cm cubes (do not crumble)
  • 0.5 cup pitted Kalamata olives

Vinaigrette dressing

  • 2 cloves garlic, crushed
  • 1 teaspoon dried oregano
  • 0.5 tsp Dijon mustard
  • 1/4 cup red wine vinegar
  • 1 teaspoon coarse salt
  • 0.5 tsp freshly ground black pepper
  • 0.5 cups of quality olive oil

Cooking the dish according to the recipe:


  1. Place cucumber, pepper, tomatoes and red onion in a large bowl.
  2. For the vinaigrette, combine the garlic, oregano, mustard, vinegar, salt, and pepper in a small bowl. Whisk in the olive oil until emulsified. Drizzle the vinaigrette over the vegetables. Add the feta and olives and toss gently.

  3. Let sit for 30 minutes to allow the flavors to meld. Serve the salad at room temperature.
