Halloumi cheese has a high melting point, making it ideal for frying, resulting in a soft and chewy interior with a crisp, crispy exterior. In this summer salad, salty fried halloumi cubes perfectly complement the sweet, refreshing watermelon. Cut the watermelon into cubes the same size as the cheese for a neat look, top with chopped celery, and dress with balsamic vinegar and extra virgin olive oil. All the salad ingredients complement each other harmoniously. This salad is a perfect appetizer with wine.

Ingredients for the recipe:
- 280g halloumi cheese, cut into 2.5cm cubes.
- 1/2 of a small seedless cucumber, diced (about 6 cups)
- 6 tender inner celery stalks with leaves, thinly sliced
- 3 tablespoons balsamic vinegar
- 3 tbsp. l. olive oil
- Vegetable oil, for frying

Cooking the dish according to the recipe:
- In a small saucepan, heat 2.5 cm of vegetable oil to 175°C (350°F) and fry the cheese, turning frequently, until golden brown, 30-45 seconds. Transfer to paper towels to drain excess oil.
- Just before serving, combine the fried cheese with the watermelon and celery in a large bowl. Drizzle with balsamic vinegar and olive oil.
