This marinated watermelon and fried halloumi dish can be served as a side dish or an appetizer. It's a stunning dish, captivating with its contrasting flavors and textures. Slices of juicy watermelon are marinated in a mixture of red wine vinegar, olive oil, honey, and mint. They're then served with a slice of halloumi and sprinkled with crispy almonds. Thanks to its high melting point, the cheese develops a delicious golden crust on both sides while frying, maintaining its shape—perfect for a beautiful presentation.

Ingredients for the recipe:
- 1 tsp chopped shallots
- 1 teaspoon crushed garlic
- 60 ml red wine vinegar
- 1 tbsp. honey
- 120 ml. + 1 tbsp. l. olive oil
- 1 tbsp toasted sliced almonds
- 1 tbsp chopped mint
- 4 slices of watermelon (30 g each)
- 4 slices of halloumi (30g each)

Cooking the dish according to the recipe:
- Place the shallots and garlic in a bowl and add a pinch of salt. Add the vinegar and honey and whisk. Slowly whisk in 120 ml of olive oil. Add the almonds and mint. Pour over the watermelon and let marinate for 1 hour. Heat a frying pan over medium heat and add 1 tbsp of olive oil. Fry the halloumi for 1 minute on each side. Remove from the pan, top with the marinated watermelon and serve.
