Watermelon and popsicles are two delicious symbols of a hot summer. Combine them in one dessert, and you'll truly enjoy both the flavor of the popsicles and their unique appearance, frozen as watermelon slices on a stick. The red watermelon layer is made from watermelon pulp whipped with sugar, while chocolate chips resemble the seeds. This is topped with a white coconut layer and, finally, a green layer of avocado whipped with lime juice and sugar. This will be the watermelon rind. To prevent all the layers from mixing and to keep them clearly separated, add the next component of the dessert only after the previous one has set slightly.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 3 cups seedless watermelon, diced and chilled
  • 0.5 cups of ultrafine sugar
  • 2 tablespoons mini chocolate chips
  • 1/4 cup coconut milk
  • 1 ripe avocado, diced
  • Juice of 1 lime
  • Special equipment: 6 fruit ice cube trays with a capacity of 100-120 ml with plastic or wooden sticks without lids

Cooking the dish according to the recipe:


  1. Puree the watermelon with 1/4 cup sugar in a blender. Transfer to a medium bowl and freeze, stirring every 30 minutes, until the puree resembles a slushy mixture, about 2 hours.
  2. Stir the chocolate chips into the watermelon mixture and divide the mixture into six 100-120 ml (3-4 oz) ice cube trays, filling them about three-quarters full. Insert wooden or plastic popsicle sticks. Freeze until slightly set, about 30 minutes.

  3. Meanwhile, in a small bowl, combine coconut milk and 2 tablespoons sugar and refrigerate.
  4. After 30 minutes, pour the coconut mixture over the watermelon mixture, leaving 0.5 cm from the top of the molds. Freeze until the mixture has set slightly, about 30 minutes.
  5. Just before the coconut mixture sets, blend the avocado, lime juice, 1/4 cup water, and the remaining 2 tablespoons sugar until smooth. Spread on top of the coconut layer and freeze for about 4 hours, until the popsicles are firm.
  6. Before serving, leave at room temperature for 5 minutes, then remove from the molds.
