These delightful summer sorbet sandwiches are easy to make and resemble watermelons when cut open. You can use any flavor of red sorbet instead of raspberry. Sandwich a small scoop of sorbet between two wafer cookies and dip each sandwich in a glaze of melted green candy, like Candy Melts.
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:
- 24 vanilla wafer cookies
- 1 tbsp. black sesame seeds
- 1 cup raspberry sorbet, softened
- 1.5 tsp rapeseed oil (canola)
- 3/4 cup dark green melty candies, melted
- 1/4 cup light green melty candies, melted

Cooking the dish according to the recipe:
- Place vanilla wafer cookies, bottom side up, on a parchment-lined baking sheet. Stir sesame seeds into the sorbet. Spoon 1 tablespoon of ice cream onto 12 cookies. Top with the remaining cookies and freeze until the sorbet is firm, about 2 hours.
- Stir 1 teaspoon of canola oil into the melted dark green candies and add the remaining 0.5 teaspoon of canola oil into the melted light green candies.
- Clean the edges of each ice cream sandwich with a small knife to create a smooth edge. Dip the sandwiches one by one into the melted dark green icing. Using a small spatula or fork, drizzle the ice cream sandwiches with the light green icing, leaving streaks. Freeze for about 30 minutes before serving.
