If you're making ice cream sandwiches at home, try funnel cakes instead of traditional cookies. They're simple, quick, and delicious! Mix the batter with store-bought cake mix, pour it from a pastry bag (or funnel cake) directly into hot oil, and fry until crispy, lacy cakes form. Sandwich soft-serve ice cream between the cakes and enjoy!



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 l. neutral oil for frying
  • 1 package (430 g) vanilla cake mix
  • 0.5 cups premium flour
  • 1 teaspoon baking powder
  • 1 and 1/3 cups whole milk
  • 3 large eggs
  • 1 container (1.5 l) strawberry ice cream
  • 0.5 cup powdered sugar

Cooking the dish according to the recipe:


  1. Pour oil into a Dutch oven and attach a deep-fry thermometer to the side. Set over medium-high heat and heat to 200°C (400°F). Line a baking sheet with paper towels and place a wire rack on top. The oil must be very hot for frying!
  2. Funnel Cakes :

    Place the cake mixture in a large bowl. Add the flour and baking powder. Add the milk and eggs. Mix with a mixer until smooth. Transfer the mixture to a pastry bag and snip off a small corner.

  3. Quickly press the dough into the hot oil in a circular motion to form a lacy circle about 8 cm in diameter. Fry until golden brown, about 30 seconds per side. Carefully remove from the oil and place on a wire rack on a baking sheet (they are fragile). Repeat to make 16 layers. They will crisp up as they cool.
  4. Let the ice cream soften on the counter for about 5 minutes. Spoon the ice cream into 8 cake layers. Place another cake layer on top of each ball and gently press it into place. Dust the ice cream sandwich with powdered sugar and serve immediately.
