For an even more sophisticated dessert, dip the ice cream sandwiches in chocolate icing and let it set. Post it mint ice cream Sandwich chocolate chips between two chocolate wafer cookie halves; freeze. Melt 6 ounces (170 g) chopped dark chocolate, 6 tablespoons (90 g) butter, and 1 1/2 tablespoons corn syrup in the microwave, stirring every 30 seconds. Stir in 1/2 teaspoon peppermint extract; let cool for a few minutes, then dip the ice cream sandwiches in the chocolate mixture to coat completely. Freeze for at least 1 hour.
