Make adorable mini sandwiches by sandwiching ice cream between two cookie circles. Roll the mini sandwiches in chocolate chips, freeze them, and you've got a unique coffee treat! This recipe offers a basic version of mini ice cream sandwiches. But you can vary the ingredients. For example, instead of vanilla cookies, use wafers, oatmeal, or shortbread cookies, sandwich any flavor of ice cream between the two halves, and roll the sandwiches in chopped nuts, sprinkles, or small pieces of fruit. It's all up to your imagination and preferences.

Cooking the dish according to the recipe:
- Line a shallow food storage container with wax paper. Combine softened ice cream with chopped cherries and pistachios. Spread a small scoop of ice cream (about 2 teaspoons) on half of the cookie and top with the other half. Roll the sandwich in finely crumbled pistachios until they adhere to the ice cream.
