To serve, prepare a delicious mint sauce with green peas. It will thicken the chicken beautifully and add a vibrant color without overpowering the vibrant mint flavor, with hints of spicy jalapeño and cilantro. Blanch the peas in boiling water for a few seconds until they soften slightly and develop a vibrant color.

Mint sauce with green peas
- 2 cups frozen peas, blanched and drained
- 0.5 cup white wine vinegar
- 3 tbsp chopped mint leaves
- 2 tbsp chopped cilantro leaves
- 1 jalapeño, roasted or baked, chopped
- 1/4 cup olive or canola oil
- 1 tbsp. honey

Cooking the dish according to the recipe:
