Grilled chicken breasts are brushed with a delicious honey and balsamic vinegar glaze just minutes before they're done, creating a golden, sticky crust with a sweet and spicy flavor. To serve, prepare a delicious mint sauce with green peas. It will thicken the chicken beautifully and add a vibrant color without overpowering the vibrant mint flavor, with hints of spicy jalapeño and cilantro. Blanch the peas in boiling water for a few seconds until they soften slightly and develop a vibrant color.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


Bird

  • 1/4 cup honey
  • 3 tablespoons balsamic vinegar
  • 4 whole chicken breasts on the bone
  • Olive oil, for frying (optional)
  • Mint sauce with green peas, recipe below

Mint sauce with green peas

  • 2 cups frozen peas, blanched and drained
  • 0.5 cup white wine vinegar
  • 3 tbsp chopped mint leaves
  • 2 tbsp chopped cilantro leaves
  • 1 jalapeño, roasted or baked, chopped
  • 1/4 cup olive or canola oil
  • 1 tbsp. honey

Cooking the dish according to the recipe:


  1. Preheat the grill to medium heat. Combine the honey and balsamic vinegar in a small bowl. If desired, brush the chicken breasts on both sides with olive oil and season with salt and black pepper. Grill for 7-10 minutes per side, or until the chicken is browned and cooked through. Brush with the honey glaze during the last few minutes of cooking. Serve on a bed of mint sauce or drizzle with the sauce.
  2. Mint sauce with green peas:

    Place the peas, vinegar, mint, cilantro, jalapeño, salt, and pepper in a blender and blend until smooth. With the blender running, slowly add the olive oil and season with salt and pepper to taste.

  3. Add honey and beat again. If the mixture is too thick, stir in a few tablespoons of cold water.
