A wonderful way to serve grilled shrimp is wrapped in lettuce leaves. It makes a very juicy and delicious appetizer, especially perfect for a picnic. Just be careful not to overcook the shrimp, so they stay firm and juicy. The highlight of this appetizer is the amazing spicy-mint sauce with the right amount of heat from serrano peppers, ginger, garlic, and fish sauce. The sauce requires no cooking; simply blend all the ingredients until smooth and you're ready to go! Serve it not only with grilled shrimp but with any seafood and enjoy its bright, refreshing flavor.

Cooking the dish according to the recipe:

  1. Preheat the grill to medium-high heat. In a large bowl, toss the shrimp with oil, salt, and pepper. Grill the shrimp for 1-2 minutes per side or until cooked through. Be careful not to overcook them, or they will be tough and rubbery. Transfer to a plate.
  2. Place about 3 shrimp on each lettuce leaf. Drizzle with the hot mint sauce and, if desired, drizzle with a little chili oil. Sprinkle with cilantro leaves. Roll up the lettuce leaves and eat immediately.

    Hot Mint Sauce:

Place all ingredients except salt in a blender. Blend until smooth, add salt to taste.
