This recipe is inspired by char siu (Chinese barbecue pork). The pork tenderloin is baked in a honey glaze with hoisin sauce, ginger, and five-spice powder, which imparts a rich, sweet flavor to the tender meat. Serve with boiled egg noodles and bok choy.

Ingredients:

  • 3 tablespoons of honey
  • 3 tablespoons hoisin sauce
  • 2 tablespoons lightly salted soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp. chopped peeled ginger root
  • 1/4 teaspoon Chinese Five Spice Powder
  • 1 pork tenderloin (450-600 g)
  • 4 bunches small bok choy (about 350g), leaves separated
  • 220 g dry Chinese egg noodles
  • 1 tbsp dark sesame oil
  • Thinly sliced ​​green onions, for sprinkling
Substituting ingredients

3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.

1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Position a rack in the upper third of the oven; preheat oven to 450°F (250°C). Place the rack on a foil-lined baking sheet; set aside. In a small bowl, combine the honey, hoisin sauce, soy sauce, oyster sauce, ginger, and five-spice powder. Cut the pork in half crosswise and pierce with a fork; rub with 2 tablespoons of the honey-hoisin marinade, 1/4 teaspoon of salt, and season with pepper. Place on the rack on the baking sheet.
  • Step 2
  • Roast the pork until the surface is dry, about 10 minutes. Transfer another 3 tablespoons of marinade to a separate bowl and brush it all over the pork (reserve the remaining marinade for serving). Return the pork to the oven and roast until a thermometer inserted into the center of the tenderloin registers 145°F (63°C), another 16-18 minutes. Transfer the pork to a cutting board and let it rest for 5 minutes.
  • Step 3
  • Meanwhile, bring a large pot of water to a boil and season with salt. Add the bok choy and cook until tender, 30-45 seconds. Transfer with a slotted spoon to a plate lined with paper towels. Add the noodles to the boiling water and cook according to package directions. Drain thoroughly, then add sesame oil and season with salt.

  • Slice the pork. Divide the noodles among bowls. Top with pork and bok choy. Drizzle with the remaining marinade and sprinkle with green onions.
