How to Make Spicy Peanut Noodles

Make this quick and versatile peanut sauce, toss it with your favorite noodles (rice noodles, yakisoba, egg noodles, spaghetti—any kind will do), and you'll have a delicious and filling dinner on the table in just 15 minutes. Inspired by Chinese sesame noodles, this recipe uses peanut butter instead of Chinese sesame paste, but you can also add it if you have it. The dish is easily adapted to your taste: add more crunchy chili peppers or ginger, a little more sugar, or water to thin the sauce.

Ingredients:

  • 2 packages of 280g fresh ramen noodles
  • 1/4 cup creamy peanut butter
  • 3 tbsp hot sauce with crispy chili peppers, plus more to taste
  • 2 tablespoons dark sesame oil
  • 2 tablespoons lightly salted soy sauce
  • 2 tbsp. l. rice vinegar
  • 1 tbsp. granulated sugar
  • 1 teaspoon grated ginger
  • Chopped green onions and honey-glazed peanuts, for topping
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Cook the noodles according to the package instructions.
  • Step 2
  • Meanwhile, in a large bowl, combine the peanut butter, crunch sauce, sesame oil, soy sauce, rice vinegar, sugar, and ginger. The sauce may look separated, but continue stirring until smooth.
  • Step 3
  • Drain the noodles, place them in a bowl with the sauce, and toss until completely coated. Sprinkle with chopped green onions and peanuts. Add more crispy pepper sauce if desired.
