Longevity noodles (yi mein) are a popular Chinese New Year dish symbolizing long life. Traditionally, the cook does not break the long noodles when boiling them, and guests eat the strands whole, without biting them. The simplest recipe for delicious yi mein includes, in addition to the noodles themselves, just a few spices: dark sesame oil, garlic, and white pepper.

Ingredients:

  • 110g very thin long wheat noodles (longevity noodles)
  • 2 tablespoons dark sesame oil
  • 3 small cloves garlic, minced
  • Sea salt and ground white pepper
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a large saucepan, bring water to a boil over high heat and season generously with salt. Add the noodles, stir, and cook until al dente, about 2 minutes. Drain and rinse the noodles with cold water, shaking well to remove excess water, and transfer to a serving bowl.
  • Step 2
  • Combine sesame oil, garlic, salt, and white pepper to taste. Pour the mixture over the noodles and toss well to coat. Taste and adjust salt and pepper as needed. Serve immediately.
