This thick and rich pork shoulder soup with rice noodles and bok choy is made in a slow cooker, where all the flavors of the ingredients and spices of Chinese cuisine meld over a long period of time at low heat. First, the whole pork shoulder is simmered in a spiced broth, and a few minutes before the soup is ready, the noodles and cabbage are added to the slow cooker. When the soup is ready, the meat will easily separate into fibers. The result is a warming and nutritious dish with a unique aroma and finish, imparted by the combination of ginger and star anise.

Ingredients:

  • 1.3 kg boneless pork shoulder
  • 3 cups lightly salted chicken broth
  • 1/4 cup soy sauce
  • 1/4 tbsp. Chinese rice wine or dry sherry
  • 3 tbsp. l. brown sugar
  • 4 cloves garlic, crushed
  • 5 cm ginger root, peeled and thinly sliced
  • 2 star anise
  • 1 head bok choy, coarsely chopped
  • 100 g dry rice noodles
  • 0.5 cup chopped cilantro
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a 6-8 quart slow cooker, combine chicken broth, soy sauce, rice wine, brown sugar, garlic, ginger, star anise, and 1/2 teaspoon salt. Add the pork, cover, and simmer on low for 8 hours.
  • Step 2
  • Then add the cabbage to the slow cooker, cover and cook for about 20 more minutes.
  • Step 3
  • Place the noodles in the slow cooker, submerging them completely in the liquid. Cover and cook for another 10 minutes.
  • Step 4
  • Remove the pork from the slow cooker and shred. Divide the pork, bok choy, and noodles among bowls and pour in the broth. Top with cilantro.
