Ingredients:


Filling
  • 1.5 cups chopped dried fruit
  • 0.5 cups of warm water
  • 0.5 tbsp. dry sherry
  • 1 tbsp curry powder
  • 4 tbsp (60 g) butter
  • 8 tbsp. basmati rice
  • 0.5 cups roasted pine nuts
  • 0.5 cup chopped parsley

Spicy rice stuffing
  • 2 cups chopped onion
  • 2 cups of celery
  • 6 tbsp (90 g) butter
  • 8 cups white rice
  • 1/4 cup parsley
  • 1/4 cup green onions
  • 1 tbsp chopped thyme
  • 1/4 cup chicken broth
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Soak 1.5 cups of chopped dried fruit in 0.5 cups of warm water and the same amount of dry sherry for 1 hour. Drain, reserving the liquid. In a frying pan, fry 1 tbsp. curry spices In 4 tbsp (60 g) butter, add 1/4 cup of the dried fruit soaking liquid. Mix with 8 cups of basmati rice, cooked until half-cooked, 0.5 cups of toasted pine nuts and 0.5 cup of chopped parsley, along with the dried fruit, salt, and pepper. Bake as directed in the spiced rice filling recipe.

    Spicy rice stuffingSauté 2 cups chopped onion and 2 cups celery in 6 tablespoons (90 g) butter. Toss with 8 cups white rice, cooked al dente, 1/4 cup chopped parsley and 1/4 cup chopped green onions, 1 tablespoon chopped thyme; season with salt and pepper. Transfer to a greased baking dish, pour in 1/4 cup chicken or turkey broth and a knob of butter. Cover and bake for 50 minutes at 190°C (375°F).
