If you have leftover dried fruit cake after Christmas, make some simple granola with it. It will keep for several weeks and can be used in this elegant yogurt-based dessert. Layer the blueberry sauce, yogurt, and granola from the cake into glasses. Enjoy!
The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.

- Make granola from a muffin:
Preheat the oven to 135°C (275°F). Crumble the cake into pea-sized pieces. Chop any larger pieces of dried fruit or nuts with a knife. Arrange the pieces on a baking sheet and bake until golden brown and the crumbs are just dried, 35-55 minutes, depending on the cake type. Let cool completely. Leftover granola can be stored in a tightly sealed container for up to 1 week.. - Make a parfait:
Heat the blueberries in a small saucepan over medium heat for about 5 minutes. Strain the juice into another container and remove the berries. Return the juice to the saucepan and simmer until reduced by half, about 4 minutes. Let cool completely. - Divide the blueberry sauce evenly among 4 tall parfait glasses. Add 1 cup of yogurt and gently stir. Sprinkle the parfait with the granola from the muffin and garnish with blueberries.
