This vibrant parfait is a dream dessert! Low in calories yet incredibly delicious, it's filled with fresh berries, layered with a soft, airy, low-fat cream cheese frosting. For an especially impressive look, top the parfait with a can of whipped cream and crushed graham crackers.



The recipes use measuring containers with the following volumes:
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Ingredients for the recipe:


  • 2 tbsp (half a 4-serving package) instant vanilla pudding mix, sugar-free and fat-free
  • 2 tablespoons granulated zero-calorie sweetener
  • 1/4 tsp vanilla extract
  • 1/4 cup skim milk
  • 1 cup fat-free whipped topping (frozen whipped cream), thawed
  • 0.5 cups low-fat cream cheese at room temperature
  • 0.5 cup raspberries
  • 0.5 cup chopped strawberries
  • Low-fat whipped cream (from a can), optional
  • 1 sheet (4 crackers) low calorie graham crackers, slightly crushed

Cooking the dish according to the recipe:


  1. Combine the pudding mix, sweetener, vanilla extract, and milk in a bowl. Stir vigorously until smooth and slightly thickened. Add the whipped topping and cream cheese. Mix thoroughly until smooth. Cover and refrigerate for at least 20 minutes.
  2. Divide the raspberries evenly among 2 parfait glasses (or any medium-sized glasses). Spoon half of the chilled pudding mixture evenly among the glasses, about 1/4 cup per serving.

  3. Repeat layers with strawberries and the remaining half of the pudding.
  4. If desired, top each parfait with whipped cream. Sprinkle crushed graham crackers evenly over the dessert. Enjoy!

    Note


    It's important that the cream cheese is at room temperature. If necessary, soften it in the microwave for a few seconds.
