In a medium bowl, whisk together 1 1/2 cups flour, 3 tablespoons sugar, 1 1/2 teaspoons baking powder, 1/2 teaspoon salt, and 1/4 teaspoon baking soda.

In another bowl, whisk together 1 cup plus 2 tablespoons milk, 4 tablespoons (60 g) melted butter, and 1 egg; stir into the flour mixture until combined (a few lumps are okay).

Grease a large nonstick skillet or griddle with butter and heat over medium-low heat. Add batter, 1/4 cup at a time, and cook until the top is bubbly and the bottom is golden brown, about 4 minutes. Flip and cook until golden brown on the bottom, about 2 minutes more. (Makes 6-8 pancakes.)
