Love the combination of baked apples and cinnamon, but don't have time for pie? Make these fluffy, delicious apple pancakes with fragrant spices, their delightful aroma will quickly wake everyone up on a Sunday morning. Enjoy them with butter, maple syrup, or honey.

Ingredients:

  • 1.5 cups premium flour
  • 2 tsp baking powder
  • 3/4 tsp ground cinnamon
  • 1/4 teaspoon fine salt
  • 1 cup of milk
  • 1/4 cup firmly packed light brown sugar
  • 1 tsp vanilla extract
  • 2 large eggs
  • 4 tbsp unsalted butter, plus extra for serving
  • 1 small red apple, core removed
  • Maple syrup or honey, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 120°C.
  • Step 2
  • In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. In a large bowl, whisk together the milk, sugar, vanilla extract, and eggs until the sugar dissolves.
  • Step 3
  • In a cast iron or nonstick skillet, melt 2 tablespoons of butter over medium heat. Let cool slightly, then whisk the butter into the egg mixture; set the skillet aside for frying pancakes.
  • Step 4
  • Stir the flour mixture into the milk mixture and quickly knead into a dough with a few lumps. Grate the apple coarsely and add to the dough.
  • Step 5
  • In the same skillet, melt 1 tablespoon of the remaining butter over medium heat. Add 2 tablespoons of batter per pancake to the hot skillet. Cook until bubbles form on the surface and the edges are set, about 3 minutes.
  • Step 6
  • Flip the pancakes and continue cooking until they are set in the center, about 1 more minute. Transfer them to a baking sheet and place them in the oven to keep warm while you cook the next batch.
  • Step 7
  • Fry all pancakes, adding the remaining 1 tablespoon butter if necessary.

  • Serve pancakes with butter and maple syrup or honey.
