Ingredients:
- 1.5 cups premium flour
- 2 tsp baking powder
- 3/4 tsp ground cinnamon
- 1/4 teaspoon fine salt
- 1 cup of milk
- 1/4 cup firmly packed light brown sugar
- 1 tsp vanilla extract
- 2 large eggs
- 4 tbsp unsalted butter, plus extra for serving
- 1 small red apple, core removed
- Maple syrup or honey, for serving

- Step 1
- Preheat oven to 120°C. Step 2
- In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. In a large bowl, whisk together the milk, sugar, vanilla extract, and eggs until the sugar dissolves. Step 3
- In a cast iron or nonstick skillet, melt 2 tablespoons of butter over medium heat. Let cool slightly, then whisk the butter into the egg mixture; set the skillet aside for frying pancakes. Step 4
- Stir the flour mixture into the milk mixture and quickly knead into a dough with a few lumps. Grate the apple coarsely and add to the dough. Step 5
- In the same skillet, melt 1 tablespoon of the remaining butter over medium heat. Add 2 tablespoons of batter per pancake to the hot skillet. Cook until bubbles form on the surface and the edges are set, about 3 minutes. Step 6
- Flip the pancakes and continue cooking until they are set in the center, about 1 more minute. Transfer them to a baking sheet and place them in the oven to keep warm while you cook the next batch. Step 7
- Fry all pancakes, adding the remaining 1 tablespoon butter if necessary. Step 8
- Serve pancakes with butter and maple syrup or honey.
