- 3 large Jonagold or Gala apples (or both), peeled, cored and sliced 1/2 inch thick.

- 1 cup of sour milk or kefir
- 2.5 cups premium flour
- 2 tbsp. granulated sugar
- 1 teaspoon baking powder
- 1 teaspoon of baking soda
- 1/4 teaspoon fine sea salt
- 0.5 tsp ground cinnamon
- 1/8 tsp ground nutmeg
- 4 eggs
- 1.5 cups of milk
- 2 tbsp. maple syrup
- 1 tsp vanilla extract
- Canola oil or melted butter

- Apples:
Preheat oven to 375°F (190°C). In a large bowl, combine the apples with cinnamon, nutmeg, and maple syrup. Place the apples in a 9-inch (22 cm) glass baking dish, drizzle with the maple syrup, and bake until caramelized and tender, stirring occasionally, about 30 minutes.
Step 2 - Pancakes:
In a medium bowl, combine the oats and buttermilk and let sit for at least 15 minutes and up to 30 minutes.
In a large bowl, whisk together the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg, mixing until evenly distributed.
Step 3 - Whisk together the eggs, milk, maple syrup, and vanilla extract until smooth, then fold in the oat mixture. Add the wet mixture to the dry mixture and knead into a dough (it may be lumpy). Cover and let rest for 15 minutes. Step 4
- Place a nonstick skillet or griddle over medium heat and brush with vegetable oil or melted butter. Pour batter into the skillet, 1/4 cup at a time, and cook until the pancakes are golden brown on the bottom and the edges are starting to dry, about 2 minutes. Carefully flip with a spatula and cook for another 1.5-2 minutes. Repeat with the remaining batter. Serve the pancakes immediately with baked apples and maple syrup.
