Pancakes with apples and thick maple sauce

Bacon-filled pancakes served with glazed apples and drizzled with a sauce made from fresh cream and maple syrup.


Ingredients:

  • 1 cored and thinly sliced green apple (Granny Smith)
  • 1 tbsp maple syrup, plus 1/4 cup
  • 1 cup sifted premium wheat flour
  • Freshly ground salt and white pepper
  • 1 whole egg, plus 3 egg yolks
  • 1 and 1/4 cups milk
  • 30 g butter, plus more (softened) for layering between pancakes
  • 4 slices of bacon
  • Sugar for sprinkling
  • 1/2 cup whipped cream
  • 2 tablespoons arrowroot (maranta starch)
  • A pinch of cinnamon
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Prepare the pancake batter by mixing flour and freshly ground salt and pepper in a bowl. Make a well in the center and crack 1 egg into it. Add 1 egg yolk and gradually pour in the milk, whisking constantly. Refrigerate for 2 hours.
  • Step 2
  • Melt 30g of butter in a frying pan. Add it to the batter. Pour the batter into the pan and tilt it until the bottom is evenly coated.

    When the top looks waxy and the bottom is cooked through, flip it over with a spatula. Lightly brown the other side and transfer the pancake, "side up," to a warm serving platter. (This side will be cooked through later, when we top it with bacon and crisp it up under the broiler.)

    Place the bacon slices on top and drizzle with 1 tablespoon of syrup. Place the dish under the grill and cook the bacon for 2.5 minutes. Meanwhile, cook the second pancake. Once the bacon is crispy, the second pancake is ready.

    Place apple slices in a circle on the pancake. Sprinkle with sugar and top with small pieces of softened butter. Return to the broiler until the apples are soft and glazed, about 2.5 minutes.

  • Now prepare the sauceIn a saucepan, heat 1/4 cup. maple syrup and cream. Mix the arrowroot starch and the remaining 2 egg yolks and add them to the saucepan.

    When the mixture begins to simmer, add a pinch of cinnamon. Stir constantly to prevent the sauce from curdling. Remove from heat when it thickens and pour over the pancakes. Serve immediately.
