Delicious and fluffy pancakes don't necessarily require dairy or eggs. This vegan recipe is a perfect example. The pancakes are made with soy milk, flour, and coconut oil, and to ensure they rise properly, a little more baking powder is added to the batter than usual. The coconut oil is essential for a soft texture and adds a pleasant flavor. These pancakes are quick and easy to make, and to ensure they hold their shape better, don't make them too big. Pancake-sized pancakes are ideal. Serve with maple syrup, jam, or any other topping of your choice.

Ingredients:

  • 2 cups premium flour
  • 3 tablespoons of sugar
  • 1 tbsp baking powder
  • 1.5 cups unsweetened plain soy milk
  • 1/3 cup unrefined coconut oil, melted
  • 1 tsp vanilla extract
  • 4 tsp vegetable oil
  • Maple syrup, nut butter or jam, for serving
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 125°C.
  • Step 2
  • In a medium bowl, combine the flour, sugar, baking powder, and 1 teaspoon of salt. In another medium bowl, combine the soy milk, coconut oil, and vanilla extract (don't worry if the coconut oil clumps). Add the soy milk mixture to the flour mixture and gently fold until fully combined (it's okay if there are lumps).
  • Step 3
  • Heat a large nonstick skillet over medium heat. Add 1 teaspoon of vegetable oil. Once the skillet is hot, add three evenly spaced 1/4 cup heaping cups of batter and cook until the pancakes are bubbly and golden brown on the bottom, 4 to 5 minutes.
  • Step 4
  • Carefully flip the pancakes and cook until the bottoms are golden brown and the pancakes are cooked through, 3-4 minutes (adjust the heat as needed). Fry the pancakes using the remaining oil and batter. Place the cooked pancakes in the oven to keep warm.

  • Serve 2 pancakes per serving, drizzled with maple syrup, nut butter, jam, or any other topping of your choice.
