Pancakes with just two ingredients—no flour, sugar, milk, or butter—are a reality! Besides being healthy and suitable for anyone on a gluten-free diet who avoids dairy and refined sugar, these pancakes are similar to classic pancakes. Their two ingredients are bananas and eggs. You can add pumpkin pie spice for a more complex flavor, but even without it, the aroma of bananas will permeate the kitchen. They act as a natural flavoring and sweetener. Fry the pancakes in a nonstick pan, and you won't need to add any oil.


Ingredients:

  • 2 large eggs
  • 1 large banana
  • 1/4 teaspoon pumpkin pie spice, (optional)
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • In a blender, beat the eggs, banana and pumpkin pie spice until a homogeneous mass is obtained.
  • Step 2
  • Heat a large nonstick skillet over medium heat. Drop the batter into the skillet, about 1 tablespoon at a time, and cook until golden brown, 1-2 minutes per side.

    Note

    If you're using a regular frying pan, melt 1 tablespoon (14 g) of butter in the pan before frying the pancakes. Add an additional 1 tablespoon of butter between batches, if necessary.
