These low-calorie muffins are made without added flour or sugar, using just four ingredients: bananas, eggs, vanilla, and cherries. Valerie Bertinelli recommends using frozen cherries, as they're already pitted, saving you a ton of time.

Ingredients:

  • 3/4 cup frozen pitted cherries, thawed, halved and drained well
  • 3 overripe bananas
  • 0.5 tsp vanilla extract
  • 4 large eggs
  • Powdered sugar for dusting, optional
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

Preparation:

    Step 1
  • Preheat oven to 375°F (190°C). Spray a 12-cup muffin tin with cooking spray. Line a plate with two layers of paper towels and place the cherries on it to dry slightly.
  • Step 2
  • Place the bananas in a large bowl and mash them thoroughly with a fork. Add the vanilla and mix until smooth. Add the eggs and mix until fully incorporated.
  • Step 3
  • Evenly distribute the cherries among the muffin tins, then top with the banana cream (each tin will be about three-quarters full). Bake until the muffins are puffed and set, 12–14 minutes. Run a thin knife around the edge of each muffin and remove with a spatula. Let cool slightly. Dust with powdered sugar, if desired, and serve.
