Banana muffins

How to Make Banana Muffins
Kitchen:American,
Menu:Breakfast,
Time: 45 min.
Complexity: easily
Quantity: 12 pcs.

If you've found yourself with overripe, dark bananas, it's time for some delicious baking! These bananas make the most delicious, soft, and moist muffins. Moderately sweet, they're filled with the subtle, warm aroma of banana, cinnamon, and walnuts, which also add crunch and an even richer flavor. The batter mixes easily with a spoon, no mixer required, and baking takes less than half an hour.
Serve warm muffins for breakfast, spread with melting butter and enjoy.

Preparation:

    Step 1
  • Preheat oven to 220°C. Lightly grease a 12-cup muffin tin.
  • Step 2
  • In a small bowl, combine flour, baking soda, brown sugar and cinnamon.
  • Step 3
  • In another bowl or a large measuring cup with a spout, whisk together the banana, vegetable oil, milk, eggs, salt, and vanilla.
  • Step 4
  • Make a small well in the center of the flour mixture. Pour the liquid mixture into the well; then stir with a wooden spoon to form a lumpy dough. Don't overwork the dough, or your muffins will be dense. Gently fold in the nuts. Divide the dough evenly among the muffin tins.
  • Step 5
  • Place in the oven and immediately reduce the temperature to 190°C (375°F). Bake until golden brown, about 25 minutes, rotating the pan halfway through. Insert a toothpick into the center of a muffin to check for doneness. The toothpick should come out clean. Cool the muffins in the pan on a wire rack for a couple of minutes. Then remove from the pan to a wire rack and cool completely. Serve warm or at room temperature.
