Ingredients:

  • 1.5 cups premium wheat flour
  • 1 teaspoon baking soda
  • 2 tsp pumpkin pie spice mixes
  • 1/4 teaspoon salt
  • 1 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 tbsp. pumpkin puree
  • 1/2 cup sour milk
  • 1/4 cup olive oil, plus more for greasing
  • 1 egg
  • 3/4 cup chopped pecans
Substituting ingredients
1 glass (st.) - 250 ml.
3/4 cup (st.) - 180 ml.
2/3 cup (st.) - 160 ml.
1/2 cup (st.) - 125 ml.
1/3 cup (st.) - 80 ml.
1/4 cup (st.) - 60 ml.
1 tablespoon (tbsp) - 15 ml.
1 teaspoon (tsp) - 5 ml.
1/5 teaspoon (tsp) - 1 ml.

    Step 1
  • Preheat oven to 190°C.
  • Step 2
  • In a large bowl, combine flour with baking soda, spices and salt.

    In another bowl, combine the two types of sugar, pumpkin, sour milk, olive oil, and egg. Mix until smooth.

    Combine wet ingredients with dry ingredients.
  • Step 3
  • Stir in the pecans. Spoon the batter into 12 greased muffin tins and bake for 20-25 minutes, or until the muffins spring back when pressed lightly in the center. Remove from the oven and cool on a wire rack.

    Serve muffins warm or at room temperature.
